Kristian Baumann’s “Koan” opens its doors in Copenhagen

COPENHAGEN: After two successful pop-ups, Kristian Baumann, is opening restaurant “Koan” on Tuesday, April 4, at Copenhagen's waterfront. His menu will feature a Korean-inspired tasting menu, part of a kitchen philosophy that reflects a culinary point of view where traditional Korean cooking techniques and flavours meet with Nordic ingredients.  "For the past seven years, my curiosity about my birth place South Korea has grown stronger and I have tried to go on a discovery in the country to learn more about its culture, history, people and traditions," says Baumann. "It has manifested itself in the fact that my vocation as a chef has grown to a higher level in the form of a sincere calmness. I again have an apprentice's view of all the impressions I have gained through dinners, ingredients as well as traditional and complex layers that are in the different Korean cuisines. Slovenia brings innovative thinkers for second edition of European Food Summit

The European Food Summit has taken its place as one of Europe’s most important gastronomy-oriented events. The event, in its second edition took place in Ljubljana in November. It was not just a forum for discussion offering delightful food for thought but also served to showcase some of the country’s most notable places also offering delightful food for thought. “The most beautiful things in the world cannot be seen or touched, they are felt with the heart”. Saint-Exupéry’s inspirational quote from “Le Petit Prince” was the first thing to read on the “reincarnation” menu of Hiša Franko, in picturesque Kobarid, helmed by Ana Roš. Soilmates to organise series of events in Brussels in September

BRUSSELS: Brussels will host the second edition of Soilmates on 12 and 13 September. This will include a series of events committed to improve the way we think of the hidden – and living – world beneath our feet. The Soilmates collective aims to create a paradigm shift in which the living earth becomes the centre of the culinary and artistic experience, rather than the chef, artist or farmer. The movement was created by restaurant owners Caroline Baerten and Nicolas Decloedt (Humus & Hortense), farmer Dries Delanote (Le Monde des Mille Couleurs) and creative designer Alexandra Swenden (Swenden Studio). The collective has been joined by numerous mindful chefs and conscious eaters, regenerative farmers, artists, artisans, earth activists, soil scientists and food experts ready to put soil in the spotlight with a series of events that will be organised during these two days.
