LJUBLJANA: Ana Roš, the Slovenian chef who has managed to put Slovenia on the global gastronomic map thanks to her culinary work at Hisa Franko has embarked on a new project opening a bakery in the Slovenian capital Ljubljana.
Pekarna Ana is a new boutique bakery which opened its doors earlier this month as Ana Roš offers a glimpse into her world of creativity at Kobarid and Hisa Franko. In this project, she has joined forces with one of the prominent representatives of modern European bread baking Nataša Đurić and Anže Kranjec the young pastry master, trained at the prestigious Ecole Bellouet Conseil.
At Pekarna Ana, the trio serve sourdough bread and pair it with assorted sweet and savoury pastries.
“Opening a new venue is never an easy decision,” said Ana Roš. “The idea came about when Hiša Franko’s amazing baker Nataša Đurić shared with me her readiness for new endeavours. Nurturing her incredible talent and potential, we’ve decided to design a new project together and invited Anže Kranjec to jump on board. I’m really excited about this project, as Nataša and Anže are the best in their fields, while my creativity brings a special touch and point of view to the table.”
Pekarna Ana derives from the challenge of broadening horizons, discovering unique tastes and enriching the market with a bakery that combines global character with a local twist. Ana Roš was recently awarded The World Best Chef Pristine Award for her utmost respect for and use of the highest quality local produce at her terroir-based restaurant Hisa Franko, the only two Michelin star restaurant in the country and a permanent feature in the World’s 50 Best Restaurants list over the past few years.
She aims to replicate the concept when designing the products for the bakery.
The offer, designed by Ana, Nataša and Anže, consists of all the staples of the world’s bread making and patisserie, such as baguettes, pain au chocolat and cruffins, upgraded to pay tribute to the local environment and Slovene treasures such as honey, salt, buckwheat, pumpkin seeds and oil, meat and dairy products, cheese and seasonal delights, such as kiwis, persimmon, elderberries, and unique spices. All products are served in biodegradable and recyclable materials only.
“In my view, bakeries offer a more relaxed atmosphere, a quick get-away amidst our errands and other obligations. It is a place where one can enjoy a quick bite, a cup of freshly brewed coffee, or pick up bread for their family. It is a calm wonderfully-smelling oasis to stop by on your way to work, after lunch or Saturday’s visit to the market,” said Ana Roš.
