Massimo Bottura’s soup kitchen is going viral. After the success of the soup kitchen at the Refettorio Ambrosiano in Milan which landed the Italian chef the award of European chef of the year, the chef from Modena will be working together with the Antoniano in Bologna to feed the city’s poor in the evening.
The Italian chef, famous for his award-winning Osteria Francescana in Modena, will be working together with Chef to Chef, a non-profit organisation in Emilia Romagna, to organise the evening service.
The chef has recently announced that he wanted to replicate the experience at Refettorio Ambrosiano in different parts of Italy including Torino, Modena and in the Brazilian favelas during the forthcoming Olympic Games.
The Italian chef worked throughout last year to raise awareness on food waste by creating the Refettorio Ambrosiano in Milan. The project was aimed at feeding the poor by using food that would otherwise have been thrown away from the pavillions of the Milan Expo. He did this by recreating recipes to turn the ‘food waste’ into splendid food creations. In the process, he also invited some of the world’s best chefs from the Adria brothers to Redzepi, Mauro Colagreco to Alain Ducasse to participate in the project.
The soup kitchen in Bologna has been open since 1954 and serves lunch to 120 people in need. From April, thanks to Bottura and his team of chefs, the soup kitchen will also remain open in the evening to welcome those in need.
This is being done with the help of 54 restaurants and 49 producers from the region of Emilia Romagna. The whole city of Bologna, is being mobilised to ensure that food is not thrown away and instead will be used to feed the poor a hot meal in the evenings.
Bottura is also working on his next project, that of opening a soup kitchen in Rio de Janeiro Brazil on 4 August 2016.
