AIRrepublic, the restaurant and terrace café created by Sergio Herman in Cadzand, Zeeland Netherlands will open on 31st March. The restaurant has now launched its online reservation system.
The restaurant is a tribute to Sergio’s father. In their open kitchen, they will focus on simple preparations using products from the Zeeland region. The focus will be on classic dishes and one’s which Sergio’s father used to prepare.
With the focus being on fish and shellfish, you will be able to find dishes like marinated clams, oysters in champagne sauce and langustines for example. The restaurant will also serve meat or roasted chicken as well as vegetarian options. The meat is supplied by renowned Belgian butcher Hendrik Dierendonck.
The restaurant is located in a pavilion in the newly built marina of Cadzand within walking distance of Pure C. From the restaurant terrace you can look towards the sea and the harbour and in the distance you can see Knokke, Zeebrugge and the horizon.
Sergio Herman has designed a place that is aimed to be accessible where everyone feels at home. It is aimed to be casual, whether you are looking for a snack with a glass of cava after a walk on the beach.
Given the popularity of Sergio Herman’s two restaurants The Jane and Pure C with chefs Nick Bril and Syrco Bakker respectively, the bookings system for May will open on 1 April and for June on 1 May. At the start of each month you will be able to book for the subsequent month.
Herman is one of the most talented chefs in the world. A former 3 Michelin star chef of Oud Sluis, he decided to close his world famous restaurant in 2013 to seek more balance and also to embark on a more entrepreneurial life away from the daily pressures of high end cuisine. He has, however, not rested on his laurels created the successful The Jane with Nick Bril in Antwerp and Pure C in Cadzand with Syrco Bakker. The Jane is considered to be one of the most beautiful restaurants in the world.
After the success of his two restaurants, he set sights on opening this new harbour restaurant, pavillion in the beach town on the North Sea. The seaside resort in the Netherlands was made popular by his restaurant Pure C.
In June last year, Herman also introduced a new concept in the Netherlands, creating Frites Atelier with the aim of creating the world’s ‘best fries’. The aim of the chain which opened its first restaurant in The Hague is to turn the humble potato and the common fast food into something good. Herman researched potatoes to find the best varieties that he could use for the chain and the sauces to accompany the fries change according to the season. All the sauces and mayonnaise accompanying the fries are made in-house. The chain opened in the city of Antwerp earlier this year.
