Chef Daniel Humm and restauranteur Will Guidara have today announced that they will open Davies and Brook, a restaurant at the Claridge’s Hotel in London.
The co-owners of the hospitality group Make it Nice that was established in 2011 and which owns and operates Eleven Madison Park, NoMad New York, NoMad Los Angeles, NoMad Bar and Made Nice said they were excited to finally share the news that they will open Davies and Brook this summer at the Claridges Hotel.
“Having the opportunity to bring our cuisine and hospitality is such a remarkable feeling and a dream come true. It is the first time that I am opening a restaurant in Europe after leaving for the states so many years ago. When I was 15 years old. I evel had a job at Claridge’s – it was a place I looked up to with awe and never in a million years thought I’d be opening a restaurant within those walls,” said Daniel Humm.
He said being able to go back is really emotional and feels like coming home.
Will Guidara said he still remembers the first time he walked into Clardige’s as if it was yesterday. He and Daniel Humm were in London for the World’s 50 Best and they decided to splurge on a nice place to stay to celebrate the occasion. “That hotel had always held a special place in Daniel’s heart and he really wanted me to see it, so we booked our rooms. I fell in love the moment they opened the front doors for us.”
He said it was not because of how gorgeous it was bu because he recognised a brand of hospitality that was familiar to him. “They took what they did so seriously, but they didn’t take themselves too seriously. They were running one of the greatest hotels on the planet and you could tell they were having a blast doing it. Their smiles were infectious, their passion contagious,” he said.
Will added that to be able to announce that they would be opening a restaurant there and get to be a part of the of the greatest food cities in the world is a dream come true.
